I hope wherever this finds you, the sun is shining and that you are enjoying some beautiful Autumn weather.
I would be lying if I said that I happily accept Fall each year.
In fact, I do the complete opposite.
I stamp my little sandal clad feet while I wait until the last minute to pull out my sweater collection and heavy knit socks.
The only thing that makes summers farewell easier is welcoming all the wonderful foods that come along with the colder days.
I of course, am known for my warm heart but cold extremities. ;)
Hot cups of tea and even hotter bowls of soup are what is on my Fall menu.
My Harvest Soup is exactly what is needed on those days when the air is crisp, when the chill takes longer to subside, and when you just need to get warmed up.
This soup is full of organic and natural flavors that are low in calories, gluten free, vegan and yet is the best tasting fall soup ever.
You will need:
2 Cups of water
2 cups of chopped cauliflower
1 1/2 cups of fresh tomatoes
1 cup of natural pumpkin (I used the pureed variety)
1/2 a medium zucchini
4 cloves of garlic
2 Tablespoons of salt
1 Teaspoon Cayenne pepper
2 Tablespoons of yellow curry powder
2 fresh oregano leaves
First fill a stock pot with your water, and veggies, boil until veggies are soft.
Add all of your spices and turn heat down to a simmer.
Lastly, once the vegetables are soft to the touch get a hand blender and emerge it into your stew, blend until your soup is smooth.
This recipe evolved one cold afternoon in our kitchen and I just HAD to record it to recreate easily again.
I figured YOU would love it too.
Our 16 month old baby devoured an whole bowl even though it was slightly spicy. (I would adjust the cayenne pepper depending on your families palate.)
Overall it had a creamy texture without the calories of a cream based soup. It is essentially made entirely of naturally grown items with worldly undertones of curry and equal parts acidic tomato and earthy cauliflower.
No one will know how healthy it is since it is filled with flavors that make you want seconds and thirds.
This soup will instantly warm you up and will make you so thankful that fall remembers to bring with it the tastes of pumpkins and a harvest of the best vegetables of the year!
You will be scribbling this recipe down just as fast as I did.
